I love cubed beets, simmered until tender, add some butter, pinch of salt, and MMMMMM!
Same with carrots. Just add a splash of honey for a small touch of sweetness.
Pickled beets are so good. You’re really missing out of you haven’t tried them.
All other types of cooking beets are kind of meh.
Oven roasted beets (inside of foil bag with a small pinch of sugar) is really good too
You can saute them in butter as well, I often do that with green beans.
And beet sugar makes good Belgian style beer. Beets are great.
