We’ve seen what happens on Voyager. If Janeway didn’t kill Tuvix, there would 100% have been some evil twist to him. He’d turn into a giant bug and/or start eating people within a week.
Lower Decks also addressed the consequences of killing Tuvix. The next Tuvix attempted to genocide/assimilate the entire crew rather than dying. Almost succeeded, too.

Worth it to be rid of Neelix.
Just eat him, damn.
Unfortunately you have to kill him first. Otherwise he’s just going to keep blathering on about cooking and other cultures.
We ended up finding out that Tuvok had a barely-contained dark side, too.
The crew wouldn’t have stood a chance.
